Bear Bites

Marmalade Cake


Ingredients


  • 225g plain flour
  • 1 teaspoon baking powder
  • 100g soft margarine or softened butter
  • 90g sugar
  • 2 eggs (size 1)
  • 3 large tbs orange marmalade
  • Grated rind of 1 large orange
  • Grated rind of 1 lemon

Instructions


  • Preheat your oven to gas mark 5 (190°C or 375°F) and grease and/or line a 900g (2lb) loaf tin.
  • Put all the ingredients into a food processor or mixer bowl and mix together for 15 to 20 seconds.
  • Scrape down the sides and process for another 5 seconds or so to remove any marmalade rind still left whole.
  • Tip into the prepared tin and smooth the top. You may, if you wish, spinkle with a little caster sugar just before baking.
  • Bake in the oven for 45 minutes to 1 hour.
  • If the tin is particularly narrow and deep you may need to bake it for a little longer and protect the top as you do so with a piece of foil or baking parchment.
  • Test with a skewer, which should come out absolutly clean if the cake is ready. Tip out to cool on a wire rack before slicing like a loaf.
